Lazy avocado kibbeh
Ingredients (serves 4)
1 avocado
100g quinoa
2 Tbs olive oil
1 Tbs lemon juice
A handful of chives, finely chopped
1 Tsp chilli flakes
A pinch of garlic powder
Salt and pepper
Method
In a pot, bring a generous amount of water with salt to a boil. Add the quinoa and cook on
medium-high heat for 12 minutes, then strain the water and set aside
In a bowl, mash the avocado and mix it with the quinoa, the olive oil, the lemon juice, the
chopped chives, the chilli flakes and the garlic powder. Season with salt and pepper
Refrigerate for 30 minutes and serve cold
