Asparagus springfest salad
Ingredients (serves 4)
A bunch of asparagus
A handful of cherry tomatotoes, halved
A bunch of fresh chives, chopped
A handful of coriander, chopped
1 Tbs lemon juice
2 Tbs olive oil
A pinch of salt
A pinch of pepper
Method
Thinly slice the asparagus lengthwise. Add them on a serving plate with the cherry tomatoes, the chives and the coriander
To make the dressing, whisk together the lemon juice, the olive oil, the salt and the pepper
Pour the dressing over the asparagus and serve!
Fish lover note: add bottarga shavings on top!
