Summer salad
Ingredients (serves 2)
2 marrows, thinly sliced
20 cherry tomatoes, halved
A handful of fresh coriander, roughly chopped
A handful of fresh mint, roughly chopped
A handful of chives, chopped
Juice of one lime
2 Tbs olive oil
Optional: sesame seeds
Method
In a large bowl, mix together the marrows, the cherry tomatoes, the fresh coriander, the fresh mint, the chives, the lime juice and the olive oil
Season with salt and pepper and sprinkle with sesame seeds, if using
