Sweet potato purée with ginger, chives and coriander
Ingredients (serves 4)
1 sweet potato (around 500g)
A handful of coriander (10g)
¼ garlic clove
5g fresh ginger
1 Tsp fresh chilli or 1 Tsp chilli powder
200mL water
4 Tbs olive oil
½ Tsp pink himalayan salt
½ Tsp black pepper
A handful of chives, finely chopped (25g)
Method
Peel the sweet potato and cut it into big chunks
Add the sweet potato chunks, the garlic, the ginger, the chilli and the coriander to a pot
Add the water to the pot and cover. Bring the water to a boil, then cook on medium-low heat for 30 minutes
Once cooked, mash the sweet potato with the back of a fork. Add the olive oil, the salt, the pepper and the finely chopped chives. Mix together and serve !

This would be a very nice side to meaty dishes.
