Chocolatey stuffed dates
Ingredients
12 medjool dates
12 whole almonds + 12 almonds, crushed
150g dark chocolate
1 Tbs coconut oil
A pinch of pink himalayan salt
Method
Line a baking sheet with parchment paper
Cut a slit down the side of each date, pull out the pit and replace it with an almond. Lay the stuffed dates on the baking sheet and place it in the freezer while you prepare the chocolate sauce
Fill a pot with one inch of water and let it simmer on medium heat. Place a bowl over the pot (without it touching the water) and add the dark chocolate, the coconut oil and a pinch of salt
Stir until it has melted, then remove from the heat
Take the dates out of the freezer and coat them one by one with the chocolate sauce before replacing them on the baking sheet
Sprinkle with the crushed almonds and return the tray to the freezer for at least 30 minutes before serving
