The ultimate lentil stew
Ingredients (serves 4)
200g green lentils
8 baby potatoes, halved
3 large Swiss chards, chopped (stems and leaves separated)
8 shallots, peeled and halved
1 garlic clove, chopped
3 Tbs olive oil
3 Tbs lemon juice
1L water
Salt and pepper
Method
In a large pot, add the baby potatoes, the shallots, the Swiss chard stems and the olive oil, and sauté on medium-high heat for 20 minutes
Add the lentils, the Swiss chard leaves, the garlic and the water to the pot. Cover and cook on medium-low heat for 40 minutes
Finally, add the lemon juice and sprinkle with salt and pepper
Drizzle with olive oil and serve!
