The ultimate lentil stew

The ultimate lentil stew

Ingredients (serves 4)

  • 200g green lentils

  • 8 baby potatoes, halved

  • 3 large Swiss chards, chopped (stems and leaves separated)

  • 8 shallots, peeled and halved

  • 1 garlic clove, chopped

  • 3 Tbs olive oil

  • 3 Tbs lemon juice

  • 1L water

  • Salt and pepper

Method

  1. In a large pot, add the baby potatoes, the shallots, the Swiss chard stems and the olive oil, and sauté on medium-high heat for 20 minutes

  2. Add the lentils, the Swiss chard leaves, the garlic and the water to the pot. Cover and cook on medium-low heat for 40 minutes

  3. Finally, add the lemon juice and sprinkle with salt and pepper

  4. Drizzle with olive oil and serve!
